Pappas Bros. Steakhouse has a new wine director overseeing the Dallas restaurant’s 31,000-bottle collection.

Jon Walker, a University of Texas at Arlington graduate, earned acclaim as a top sommelier at Michelin-starred Manresa restaurant in Northern California; the winefocused restaurant shuttered in December.

Walker replaces Barbara Werley, who managed the Wine Spectator Grand Award-winning cellar for more than a decade.
