Stillwell’s Steakhouse pays homage to Dallas rancher Hallie Stillwell

There’s nothing cookie-cutter in the group of Harwood restaurants, including Stillwell’s. The steakhouse, recently named to the Michelin Recommended List, offers a dining experience that stands out in the crowded Dallas steakhouse scene—a significant nod given the city’s numerous prime steakhouses. Nestled inside the Hôtel Swexan—a playful blend of Swiss hospitality and Texan charm—Stillwell’s pays homage to legendary Dallas rancher Hallie Stillwell. While heading to a hotel for dinner might not sound as glamorous as a standalone restaurant, this one is worth the trip. Take the elevator to the seventh floor to enter an elegant, clubby den. White-jacketed servers will suggest you begin in the adjoining cocktail lounge (and you should) as you explore the extensive menu, which includes classics like shrimp cocktail, caviar and a bountiful seafood tower. But, the real highlight is Stillwell’s bespoke in-house HWD steaks—superb Akaushi beef from their exclusive breeding program just north of the Red River.
