A classic lemon bar recipe from Sweet Lucy’s Pies in Fort Worth

Cook Time: 20 min

Ingredients

Crust

  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar

Lemon Filling

  • 4 eggs
  • 2 cups granulated sugar
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon (grated rind)
  • 5 tablespoons all-purpose flour
  • 1 teaspoon baking powder

For finishing

  • Powdered sugar, for dusting

Preparation

Preheat oven to 350°F.

Make the crust: in a bowl, combine butter, flour, and powdered sugar. Pat evenly into a greased 9×13-inch pan.

Bake crust for 30 minutes, or until lightly browned. Remove from oven and let cool slightly.

Prepare filling: Beat eggs lightly. Add granulated sugar, lemon juice, and lemon zest. In a small bowl, mix flour and baking powder, then stir into the lemon mixture.

Pour filling over the baked crust.

Bake again at 350°F for about 30 minutes, or until just set.

Cool completely, then sprinkle generously with powdered sugar before serving.
